I have 2 days off per week. I like to spend 1 days preparing food for the next whole week. Patti Labelle Hot Water Cornbread is always my priority not because it’s easy to make, simple ingredients which always store at home. Also, I can make big quantities and keep them for over a month so that anytime I have friends come over, I can just simply reheat and serve it.

I know this delicious snack takes you only 15 minutes cooking but sometimes it’s too busy for you to make it. Or you have quite many dishes for a meal and cannot finish all the snacks at once. It can happen, so I will share with you this method to keep your snacks from freezing.

I highly recommend an airtight jar and stock your snack in normal room temperature for maximum 2-3 days. For bigger quantities, let go store them in the freezer. Defrost them well by using the microwave, if you don’t want to once again fry it over the oil. Airfryer is a good idea. Set the temperature at 180 – 200˚C for 5 minutes.

Ingredients

  • 2 cups yellow cornmeal
  • 1 ½ cup hot water
  • 2 cups of canola oil ( this can be replace by sunflower seed oil or any cooking you have at home)
  • 1 teaspoon of salt
  • 1 tablespoon of sugar

Instruction

Step 1

Pour 2 cups of canola into a medium sized frying pan. Heat on medium to high fire for approx. 1-2 minutes before frying. One tip to know the oil is ready : use a chopstick dip into the oil. If you see some little oil bubbles come out from the chopstick head, it means the oil is ready.

Step 2

Put all the dry ingredients together into a large mixing bowl. Combine salt, sugar and the yellow cornmeal, and mix them well using a whisk or your hand.

Step 3

Pour one and a half cups of water into a medium sized pot and bring it to a boil. Make sure the water is rolling boil. Then turn off the oven, remove the water from heat and stand aside.

Step 4

Now slowly pour hot water into the cornmeal mixture. Use a big spoon to mix the cornmeal and hot water. Make sure the mixture has no lumps and a great texture.

Step 5

If you prefer using your hand, I suggest you wet your hand before handling the hot batter. Using a big spoon to form the batter into patties or you can use any alternative method that is comfortable.

Step 6

When you are sure the oil is heated it means it reaches 350 degree Celsius. Now is the time to fry your patties, on each side fry for roughly two and half minutes. When you see it turns golden brown in the adgee, flip it over. You can adjust the amount of oil if you want to quickly process it. They’ll cook and crisp up faster.

Continue frying until golden brown on the outside. You can take the first one as a sample, break it and check if it is tender inside. I always like to try the first piece of my product . This also helps to fix your food if it needs to add in some more ingredients. If it’s fine. Continue with the rest.

Step 7

Get ready the paper towels to place the bread right after you take it out of the pan. This helps to get rid of the excess oil. Try not to put them on top of each other to avoid oil re-absorb. Serve them with your favorite sauce.
